Spiced Blueberry Honey Jam


I was selected by Natrel to participate in pledge. They sent me a summer preserves kit to make some delicious jam. THANKS NATREL! The Spiced Blueberry Honey Jam recipe is from a book that was supplied with my kit: Preserving Made Easy. I added a pinch of cinnamon since it is one of my favourite spices and it added a nice touch! mmmmm….. who doesn’t like cinnamon?!

2-1/2 cups          fresh or frozen chopped blueberries
2-1/2 cups          granulated sugar
1 cup                  liquid honey
1 tbsp                 lemon juice
½ tsp                  ground nutmeg  (or grate the seed of a nutmeg for fresh flavour)
1                         pouch liquid fruit pectin

**1 pinch            cinnamon

Makes 4 cups (1 L)

Place blueberries, sugar, honey, lemon juice, cinnamon and nutmeg in a large stainless steel saucepan. Bring to a full boil over high heat and boil hard for 2 minutes, constantly stirring. Remove from heat and stir in pouch of pectin. Ladle into hot jars!
